Wine ages at a faster rate at higher temperatures, therefore temperatures above 70 degrees is not good for preserving the wine. It can in fact cause the wine to spoil, if left at these temperatures. You also do not want your wine to freeze, that can also cause effects that are not desirable to the flavor and aroma of your collection. Wine storage is a very important decision in how your wine will look, taste and smell.
The perfect conditions for wine storage are temperatures between 45 to 55 degrees Fahrenheit and humidity between 60% to 70%. If you have humidity higher than 70% the moisture will be trapped inside your wine bottles preventing the evaporation through the cork and also can cause micro organisms to grow which will cause your wine to age before its time or even spoil your wine.
You can find wine storage units that will maintain the correct wine temperatures and humidity for any wines you choose to purchase. All wines can be stored at the above temperatures, but white wines should be stored at a lower temperature than red wines. You can find many cabinets that have temperature controls that will allow you to have red wines at one temperature setting and white wines at another.
A few companies have now started to rent out space for your wine storage. You can find a few that let you store your favorite wines in their temperature control facilities. This is great for wine collectors that have a large collection and only want to have a few bottles at home.
